Sometimes the most memorable meals come from trying something you never expected to love.

Quick Summer Outdoor Entertaining Tips

Hosting an outdoor meal doesn't have to mean spending the entire day cooking. A little planning goes a long way when you're serving family and friends outside.

  • Keep food safety in mind. Don't leave perishable foods sitting out for extended periods on hot days. Use coolers, ice packs, and shaded serving areas whenever possible.
  • Prep ingredients ahead of time. Chop vegetables, make sauces, and prepare marinades earlier in the day to reduce last-minute work.
  • Mix hot and cold dishes. Pair grilled proteins with fresh salads, chilled drinks, and cold desserts to balance the summer heat.
  • Create a simple menu. One main dish, one or two side dishes, a sauce, and a dessert are often all you need for a satisfying meal.
  • Take advantage of seasonal produce. Summer is the perfect time to enjoy sweet corn, tomatoes, cucumbers, peaches, watermelon, fresh herbs, and leafy greens.
  • Set up a self-serve station. Allow guests to customize tacos, sandwiches, fajitas, sauces, and toppings to make entertaining easier.

Lodge Blacklock 12 Inch Triple Seasoned Cast Iron Grill Pan - Lightweight Design
5.0
$99.95

My Review: I was thrilled when Lodge introduced their Blacklock 12 Inch Triple Seasoned Cast Iron Grill Pan it combines the durability I’ve always trusted from the brand with a much lighter design that makes handling a breeze. The larger square surface was a welcome upgrade, easily fitting about 1 ¾ pounds of boneless, skinless chicken thighs with room to spare, and the triple seasoning provided a naturally nonstick finish right from the start. I’ve been cooking with Lodge cast iron for years, and once again, they didn’t disappoint. This pan is built to last a lifetime while still making everyday cooking feel effortless. Cuisinart CCG-190 Portable Charcoal Grill, 14-Inch
5.0
$34.99

My Review: I recently decided to change up my outdoor cooking setup and ditched my old, low-quality grill for something more practical, a Cuisinart wok station with a tabletop. That led me to the Cuisinart Portable Charcoal Grill, and I couldn't be happier with the switch. Don’t be fooled by its small size. If you know how to work a charcoal grill properly, you can turn out some seriously delicious meals on this thing. I actually love that it’s compact, easier to clean, simple to store, and I can tuck it away to prevent rusting. One of my favorite things now is sitting next to it like it’s a little fire pit, grilling and eating right there on the spot. It's a game-changer for small-space outdoor cooking.

5 Quick Food Safety Tips for Outdoor Entertaining

Cook's Notebook is your Cooking Tips Resource Guide. Become a better home cook with tips to help you cook more efficiently.

  1. Keep hot foods hot and cold foods cold. Foods left in the temperature danger zone between 40°F and 140°F can quickly become unsafe to eat, especially on hot summer days. Review my guide on Food Temperature Safety Zones before your next gathering.
  2. Use separate utensils and platters for raw and cooked foods. This helps prevent cross-contamination when grilling meats, seafood, and vegetables. Learn more in my Cross-Contamination Guide.
  3. Cook proteins to their proper internal temperature. An instant-read thermometer is one of the easiest ways to ensure food is both safe and properly cooked. Check out my Fish Doneness Guide and Steak Grilling Times Chart for quick references.

Frequently Asked Questions

Here is a list of common questions I have answered. If you have any questions, please write them in the comments below.

What foods are best for outdoor summer meals?

The best outdoor meals are easy to serve, packed with fresh flavors, and hold up well in warm weather. Grilled meats, seafood, tacos, sandwiches, fresh salads, vegetable sides, frozen drinks, and fruit-based desserts are all great choices for backyard entertaining.

How do I plan a simple outdoor meal for guests?

Start with one main dish, one or two side dishes, a sauce or topping, and a dessert. This creates a balanced menu without overwhelming yourself with too much prep work or cooking time.

What are some good make-ahead recipes for summer entertaining?

Fresh salads, sauces, dips, salsas, and desserts can often be prepared ahead of time. Having a few make-ahead dishes allows you to spend more time with your guests and less time in the kitchen.

How do I keep food safe during outdoor gatherings?

Keep cold foods chilled until serving and avoid leaving perishable foods in direct sunlight for extended periods. Use coolers, ice packs, and shaded serving areas when entertaining on hot summer days.

What are some vegetarian options for outdoor entertaining?

Grilled tofu, falafel sandwiches, vegetable-forward side dishes, couscous salads, guacamole, pico de gallo, and fresh vegetable platters are excellent vegetarian-friendly additions to an outdoor menu.
