A Quick Salmon Tortellini Dinner That Feels Homemade
Some nights, making dinner from scratch isn't realistic, but that doesn't mean dinner has to feel thrown together. This salmon tortellini combines paprika-seasoned air-fried salmon with fresh spinach tortellini, frozen spinach, prepared pesto, and spicy Calabrian pepper sauce for a meal that comes together quickly with minimal prep. Most of the ingredients came straight from the grocery store, ready to cook, but a few simple techniques and bold flavors turn them into a dinner that still has that restaurant-inspired creativity I love bringing to everyday meals.
Why You'll Love This Recipe
- Ready in about 20 minutes: The salmon cooks in the air fryer while the fresh tortellini and spinach cook together on the stove.
- Smart store-bought shortcuts: Fresh tortellini, frozen spinach, prepared pesto, and Calabrian pepper sauce eliminate a lot of prep without sacrificing flavor.
- A complete meal in one dish: You get salmon for protein, tortellini for carbs, and plenty of spinach for vegetables.
- Big flavor with very little work: Hungarian paprika, pesto, Parmesan cheese, and spicy Calabrian peppers do most of the heavy lifting. Also check out: Hungarian vs Spanish Paprika.
- Still feels special: A few simple ingredients can come together to create a colorful, restaurant-inspired plate with the right balance of flavors and techniques.
Note From Chef Maika
Now that we have a baby, she's basically in charge of how we spend our time lol. When it's time to make dinner, I need something I can get on the table in under 30 minutes, especially since I'm making her baby food, too. This salmon tortellini has become one of my favorite shortcut meals because I can get everything cooking quickly, so dinner doesn't feel like an afterthought.
For these shortcut meals, I try to hit three areas: protein, carbs, and vegetables. Then I look at the convenience ingredients I have and think about how I can make them work together into a real dish. Just because I didn't make the tortellini or pesto from scratch doesn't mean I can't bring some restaurant-quality creativity into the plating and flavors. The goal is to make dinner look like it took forever, even when it didn't.

Ingredients with Steps
Preheat the air fryer to 385°F. Pat the salmon fillets dry, spray them with olive oil, and season with kosher salt and Hungarian paprika, then air-fry until cooked through. Meanwhile, cook the spinach tortellini in salted boiling water according to the package directions, adding the frozen spinach shortly before the pasta is done. Drain and return everything to the warm pot with the heat off, then gently toss with pesto and Bomba sauce. Plate the tortellini, sprinkle with grated Parmesan cheese, and top with the paprika salmon.

Fresh pasta typically cooks in just 2-4 minutes because it is already hydrated and tender, while dried pasta usually needs about 8-12 minutes to absorb water and soften as it cooks.
Culinary Glossary
This section provides concise definitions of key ingredients and techniques to enhance understanding and improve cooking skills related to this post. Find More Terms: Culinary Glossary.
Ingredients
- Bomba Sauce: A spicy Italian-style condiment made with Calabrian chile peppers that adds concentrated pepper flavor and heat.
- Hungarian Paprika: Ground dried peppers associated with Hungarian cooking, available in several grades ranging from sweet and mild to hot. Compared with Spanish paprika, Hungarian paprika is generally known for its sweet, earthy, or peppery character, while Spanish paprika (pimentón) is commonly available in sweet, bittersweet, and hot varieties and may have a distinctive smoky flavor when the peppers are smoke-dried.
- Kosher Salt: A coarse-grained salt commonly used by cooks for seasoning because its larger crystals are easy to pinch and distribute evenly.
- Pesto: An Italian sauce traditionally made with basil, garlic, nuts, Parmesan cheese, and olive oil. Check out Homemade Easy Spicy Basil Pesto.
- Tortellini: Small, ring-shaped stuffed pasta traditionally filled with ingredients such as cheese or meat.
- Parmesan Cheese: A firm, aged Italian cheese with a salty, savory flavor commonly grated over pasta and other dishes.
Techniques
- Pat Dry: Removing surface moisture from food with a paper towel before seasoning or cooking, which can help promote better browning.
- Preheat: Bringing the cooking environment to the required temperature before adding food so it begins cooking at the intended temperature.
- Air Fry: Cooking food with rapidly circulating hot air, which helps cook and brown the exterior with relatively little added oil.
- Toss vs. Fold: Tossing gently lifts and mixes ingredients, distributing a sauce or seasoning evenly. Folding is an even gentler technique that uses a lifting-and-turning motion to combine ingredients without breaking delicate foods, such as filled tortellini.

Instructions with Pictures (Coming Soon!)
Follow the instructions and cooking tips below using the step-by-step picture guide.

First: Preheat the air fryer to 385°F. Then, pat the salmon fillets dry with paper towels.

Spray the salmon lightly with olive oil.

Then, season with kosher salt.

The oil helps the seasoning stick and prevents it from being blown away by the air fryer's airflow.

Finally, sprinkle with Hungarian paprika.

Then, place the salmon in the preheated air fryer and cook at 385°F for about 6-8 minutes, depending on thickness.

Meanwhile, bring a pot of salted water to a boil and add the spinach tortellini.

Cook according to the package directions, adding the frozen spinach shortly before the tortellini is done.

Drain the tortellini and spinach together, then return them to the warm pot with the heat off.

Add the pesto.

Then add the Bomba sauce.

Gently toss the tortellini and spinach until evenly coated.

Divide among plates

Top each serving with an air-fried paprika salmon fillet and serve.

Finally, finish with grated Parmesan cheese.
Equipment You'll Need (With Alternatives)
Here's what you'll need to make this RECIPE NAME recipe efficiently, plus easy swaps if you don't have everything on hand.
- Air Fryer: Cooks the salmon quickly while helping brown the seasoned exterior (oven or toaster oven).
- Medium Pot: Boils the tortellini and heats the frozen spinach (large saucepan or Dutch oven).
- Colander: Drains the cooked tortellini and spinach (fine-mesh strainer or carefully drain using a pot lid).
- Tongs: Places and removes the salmon without breaking the fillets (wide spatula or fish turner).
- Mixing Spoon: Gently combines the tortellini, spinach, pesto, and Bomba sauce (silicone spatula or wooden spoon).
- Paper Towels: Removes excess surface moisture from the salmon before seasoning (clean, lint-free kitchen towel).

An oil spray dispenser makes it easy to lightly and evenly coat the salmon with olive oil without adding more than you need.

Storage and Reheating
Learn how to properly store leftovers and reheat them to keep them fresh and flavorful. Learn more about Understanding Food Temperature Safety Zones: Cook, Store & Serve Safely.
Refrigerator
Allow the leftovers to cool, then refrigerate the salmon and tortellini in airtight containers for up to 3 days. If possible, store the salmon separately to make reheating easier.
Freezer
The cooked salmon can be frozen in an airtight, freezer-safe container, but I don't recommend freezing the dressed tortellini, as the filled pasta, spinach, and pesto can lose texture and quality after thawing.
Reheating the Salmon
Reheat the salmon gently in the air fryer at 350°F for a few minutes, just until warmed through, to help prevent it from drying out.
Reheating the Tortellini
Add the tortellini and spinach to a covered pan over low heat with a small splash of water. Heat gently, stirring or folding occasionally, until warmed through. You can also microwave individual portions in short intervals until hot.
Food Safety
Refrigerate leftovers within 2 hours of cooking, then reheat to 165°F before serving.
Meal Prep Idea
To make dinner even faster, portion the frozen salmon fillets, frozen spinach, tortellini, pesto, and Bomba sauce ahead of time so everything is ready to grab and cook. You can also thaw the salmon overnight in the refrigerator, then pat it dry and season it just before cooking.
Substitutions
Find easy ingredient swaps to fit dietary needs or what you already have in your pantry.
Dairy-Free
- Spinach Tortellini: Most cheese-filled spinach tortellini contains dairy. Substitute with a dairy-free filled pasta that works with pesto-style sauces.
- Pesto: Traditional prepared pesto contains Parmesan or another hard cheese. Use a dairy-free pesto.
- Parmesan Cheese: Omit the Parmesan or use your preferred dairy-free Parmesan-style substitute.
Gluten-Free
- Spinach Tortellini: Traditional tortellini is made with wheat flour. Substitute gluten-free tortellini and cook according to the package directions, as cooking times and textures may differ.
Vegetarian
- Salmon Fillets: Omit the salmon and serve the spinach tortellini as the main dish, or replace the salmon with a vegetarian protein you already enjoy.
- Parmesan Cheese: Traditional Parmesan is made using animal rennet. If needed, choose a vegetarian hard Italian-style cheese made with microbial or vegetarian rennet.
- Pesto: Prepared pesto commonly contains Parmesan or another hard Italian cheese made with animal rennet. Choose a pesto specifically made with vegetarian cheese if you avoid animal rennet.
Convenience
- Atlantic Salmon: Substitute with another salmon variety or a firm fish such as cod, mahi-mahi, or trout. Adjust the cooking time based on thickness.
- Spinach Tortellini: Use cheese tortellini, ravioli, or another fresh-filled pasta. Regular dried pasta also works, but will require a longer cooking time.
- Frozen Spinach: Substitute with fresh spinach, frozen kale, or another quick-cooking leafy green.
- Pesto: Substitute with another prepared herb pesto, or combine olive oil, Parmesan, dried or fresh basil, and a little garlic for a quick alternative.
- Hungarian Paprika: Use regular sweet paprika. Smoked paprika can also work, but it will give the salmon a noticeably smokier flavor.
- Kosher Salt: Substitute with table salt or fine sea salt, using less to start since the smaller crystals measure differently by volume.
- Olive Oil Spray: Brush or drizzle the salmon lightly with regular olive oil or another neutral cooking oil.
- Parmesan Cheese: Substitute with Pecorino Romano, Grana Padano, or another finely grated hard cheese.
- Bomba Sauce: Substitute with Calabrian chile paste, crushed red pepper flakes, chili crisp, or a small amount of your favorite hot sauce.

Variations
Explore fun twists and creative ways to make this recipe your own.
Make It Creamy
For a quick, creamy salmon tortellini, stir a spoonful of cream cheese into the warm tortellini along with the pesto and Bomba sauce, then add a splash of reserved pasta water to loosen the sauce until creamy. You can also use a splash of heavy cream if you have it on hand, then finish with Parmesan cheese.
Turn Leftovers Into a Cold Salmon Tortellini Salad
Chill the leftover tortellini and salmon completely, then break the salmon into bite-sized pieces and gently toss it with the tortellini and spinach. Add a little pesto, a squeeze of lemon juice, and a drizzle of olive oil to refresh the sauce, then finish with Parmesan cheese and serve cold. This is especially useful when you don't want to reheat the salmon and risk drying it out.
5 Quick Cooking Tips
Cook's Notebook is your Cooking Tips Resource Guide. Become a better home cook with tips to help you cook more efficiently.
- Pat the Salmon Dry: After thawing, remove as much surface moisture as possible before adding the olive oil and seasoning. This helps the salmon roast on the outside rather than steam. Read my post on prepping fish.
- Give the Salmon Some Space: Arrange the fillets with room around them so the hot air can circulate. If four fillets don't comfortably fit, cook them in batches. Learn about my browning in my The Maillard Reaction post.
- Time the Pasta With the Salmon: Bring your pasta water to a boil while the air fryer preheats. Fresh tortellini cooks in only a few minutes, so wait until the salmon is cooking before adding the pasta to the water.
- Add Frozen Spinach Straight to the Pot: There's no need to thaw it first. Add the frozen spinach near the end of the tortellini's cooking time, and let the water return to a simmer so everything heats through.
- Sauce With the Heat Off: After draining the tortellini and spinach, return them to the warm pot, leaving the burner off. Gently fold in the pesto and Bomba sauce using the residual heat; it is enough to warm them without overcooking.
Frequently Asked Questions
Here is a list of common questions I have answered. If you have any questions, please write them in the comments below.
You can air fry salmon from frozen, but for this quick recipe, I prefer thawing it first so I can pat the surface dry and season it evenly. Cooking from frozen will also require additional cooking time.
Cooking time depends on the thickness of your salmon fillets and your air fryer. For food safety, cook salmon until the thickest portion reaches an internal temperature of 145°F.
Yes. Dried tortellini takes longer to cook because it needs time to absorb water and soften, so follow the package directions rather than using the 2-3 minute cooking time for fresh tortellini.
Bomba sauce made with Calabrian peppers has noticeable heat, but you can easily control the spice level. Start with less and add more after tasting the pesto tortellini.
Yes. You can bake or pan-cook the seasoned salmon instead, then prepare the tortellini and spinach as directed. The cooking time for salmon will vary depending on the method and thickness of the fillets.
