Easy Smoked Sardines Recipe with Harissa
If you have a tin of smoked sardines in your pantry and aren't sure what to do with it, this is a great place to start. Instead of serving the sardines straight from the tin, I gently warm them in a skillet with sautéed onions, red bell peppers, jalapeños, tomatoes, spinach, and harissa paste.
The harissa brings a spicy, savory flavor, while the tomatoes and a little water create a light sauce that coats the vegetables and sardines. To finish, I add quartered boiled eggs, letting them pick up some of the sauce without breaking apart.
It's a simple meal that combines ingredients you might already have in your kitchen, with very little cooking time. For me, sardines are more than a convenient pantry ingredient. They remind me of my mom's spicy Haitian-style sautéed sardines served over grits with fresh tomatoes, one of my favorite meals growing up.
Why You'll Love This Recipe
- Pantry-friendly protein: Canned smoked sardines are convenient, already cooked, and easy to keep on hand for quick meals.
- Bold harissa flavor: Harissa paste adds chile heat, aromatics, and complexity without requiring a long list of individual spices.
- Plenty of vegetables: Red bell peppers, tomatoes, onions, jalapeños, and spinach add color, flavor, and texture.
- Quick skillet preparation: The vegetables cook in minutes, and the sardines only need gentle warming.
- Versatile serving options: Enjoy the warm sardines alongside mixed greens, with crusty bread, or over rice.
Note From Chef Maika
Sardines have always held a special place in my heart because they remind me of my mom and the meals she made when I was growing up.
One of my favorite dishes was her Haitian-style sautéed sardines, prepared in a flavorful Creole tomato base with onions. She served them over warm grits, with freshly sliced tomatoes on the side. The combination of the savory sardines, soft grits, and fresh tomatoes was so simple yet incredibly satisfying. It's one of those meals I can still picture whenever I cook sardines today.
I think that's why I enjoy experimenting with them so much. Sardines might be an inexpensive pantry ingredient, but to me, they're connected to family, comfort, and memories of home. When I developed this Harissa Smoked Sardines recipe in May 2022, during the early days of Just Maika Cooking, I wanted to take that familiar ingredient in a different direction.
Instead of preparing a Haitian Creole tomato base, I used harissa paste with sautéed peppers, onions, tomatoes, garlic, and spinach. The smoked sardines brought their own rich flavor, while the harissa added a spicy, aromatic element. I finished the skillet with quartered boiled eggs and served everything alongside mixed greens with Green Goddess dressing.
Although the flavors differ from my mother's dish, combining sardines with a flavorful tomato-based preparation still feels familiar to me. And that's one of the things I love about cooking. The ingredients we grow up with can become the foundation for new recipes while still carrying the memories that made us love them in the first place.

Once the spinach begins to wilt, stir in the harissa paste, then gently arrange the smoked sardines on top of the vegetables. Add a splash of water, reduce the heat, and cover briefly to warm everything through. Finish by adding the quartered boiled egg, gently coating it with the sauce. Serve alongside mixed greens tossed with Green Goddess dressing or another dressing of your choice.

Instructions with Pictures
Follow the instructions and cooking tips below using the step-by-step picture guide.

Step 1: Sauté the Vegetables. Heat the olive oil in a sauté pan over medium heat. Add the sliced onions, red bell peppers, and jalapeños. Sauté briefly until the vegetables begin to soften.
Step 2: Add the Tomatoes and Garlic. Stir in the diced tomatoes and pressed garlic. Cook briefly to release their aromas and let the tomatoes begin to soften.
Step 3: Wilt the Spinach. Add the fresh spinach and season with salt and freshly ground black pepper. Gently sauté until the spinach wilts and combines with the vegetables.
Step 4: Stir in the Harissa Paste. Add the harissa paste and gently stir to coat the vegetables. Allow the paste to warm briefly, releasing its aromatic spices.

Step 5: Add the Smoked Sardines. Carefully arrange the smoked sardines over the vegetables and add the water. Reduce the heat to low, cover, and gently simmer until the sardines are warmed through. Avoid stirring too much to keep the sardines intact.

Step 6: Finish with Boiled Egg. Add the quartered boiled egg and gently coat it with the harissa sauce. Be careful not to break apart the sardines or egg pieces.

Step 7: Serve with Fresh Greens. Serve the warm harissa smoked sardines, vegetables, and boiled egg alongside mixed greens tossed with Green Goddess dressing or your favorite vinaigrette. The fresh salad balances the rich, smoky, and spicy flavors of the skillet dish.
Equipment You'll Need (With Alternatives)
Here's what you'll need to be efficient, plus easy swaps if you don't have everything on hand.
Sauté Pan: For cooking the vegetables and gently warming the sardines (a large skillet also works).
Chef's Knife: For slicing the peppers, onion, and tomatoes (a utility knife works for smaller vegetables).
Cutting Board: For preparing the fresh ingredients (use a stable, non-slip cutting surface).
Garlic Press: For pressing the garlic directly into the pan (finely mince with a knife instead).
Silicone Spatula: For gently stirring the vegetables and sauce (a wooden spoon works).
Lid: For briefly covering the skillet while warming the sardines (use a compatible pan lid).

My Review: I absolutely love my All-Clad HA1 Hard Anodized Nonstick Fry Pans! I have two essential sizes, and they make cooking so much easier. The larger pan is perfect for dishes like chicken cutlets or stir-fries, while the smaller one is ideal for delicate tasks like making sauces, frying potstickers, or whipping up egg dishes. I’ve been a loyal All-Clad fan for years. They’ve been my go-to brand since my time working in commercial kitchens. Their durability and performance are unmatched, and I love that they’re USA-made and have been around for so long. These pans are no exception; they heat evenly, clean up effortlessly, and are incredibly reliable.
My Review: The PAUDIN 8-inch Chef's Knife is an absolute standout in both sharpness and craftsmanship. It stays incredibly sharp through regular use, making prep work effortless. The high-carbon stainless steel blade showcases PAUDIN’s attention to detail, while the ergonomic handle provides a comfortable grip for extended use. Despite its premium feel, this knife is impressively affordable, offering exceptional quality without the high price tag. That’s why I’ve recently switched all my knives to PAUDIN—they truly deliver on durability, beauty, and performance. If you want a reliable, well-crafted knife at a great value, this is the one to get!
My Review: I absolutely love this Plastic Cutting Board Set of 4 with a Storage Stand! The color-coded boards are a lifesaver for preventing cross-contamination, especially when I’m switching between meats and veggies. The plastic is super sturdy, so I don’t have to worry about it flexing while I’m chopping. What really stands out for me is how easy they are to use after chopping. I slide everything straight into the pot, which keeps my kitchen clean and saves time. Cleanup is such a breeze, too; they go right into the dishwasher without any warping. Plus, the storage stand keeps everything neat and organized. These boards have made cooking so much easier and more enjoyable!
My Review: The OXO Good Grips Heavy Duty Garlic Press has been one of my go-to kitchen tools, especially when I'm cooking with whole garlic cloves and don't have any minced garlic prepped ahead of time. As a chef, I appreciate tools that make everyday cooking more efficient. A garlic press saves me time when I need fresh garlic quickly without pulling out my knife and cutting board for another task. I know some cooks prefer mincing garlic by hand rather than using a garlic press, and that's perfectly fine! But here's what I always emphasize: Choose kitchen tools that fit your cooking style, skill level, and time. Cooking isn't about doing everything the hard way. It's about understanding your options and finding what helps you cook confidently and efficiently. For me, this garlic press has earned its place in my kitchen, especially on busy cooking days.
Review: I love this Walfos Silicone Spatula Set! The spatulas are sturdy, with a strong steel core, easy to clean, and come in different sizes, making them perfect for all my cooking, baking, and mixing needs. The seamless design is high quality, and getting five spatulas in one pack is an amazing value for the price. I've always had great experiences with Walfos products, and this set is another reason I love shopping from this brand.
My Review: I've had this universal lid since 2022, and it still looks brand new, with no cracks, fogging, or warping. The tempered glass makes it easy to monitor cooking, and the silicone rim creates an excellent seal that traps steam beautifully without rattling or slipping. I especially love that it fits multiple cookware sizes, so it’s been a total space-saver in my kitchen. If you're short on storage or just tired of mismatched lids, I highly recommend this one. It’s durable, sleek, and reliable.
Storage and Reheating
Learn how to properly store leftovers and reheat them to keep them fresh and flavorful. Learn more about Understanding Food Temperature Safety Zones: Cook, Store & Serve Safely.
Refrigerator
Transfer leftover sardines, vegetables, and egg to an airtight container and refrigerate promptly. Use within 3 to 4 days. Store the dressed mixed greens separately, since the salad will wilt if combined with the warm sardines or stored in the same container.
Freezer
I don't recommend freezing the complete dish because the boiled egg and vegetables may develop an unpleasant texture after thawing. For the best results, prepare this recipe fresh.
Reheating
Reheat the sardines and vegetables gently in a skillet over low heat until heated through, adding a small splash of water if needed. Avoid stirring too much, as the sardines can break apart. For the best texture, you can remove the boiled egg before reheating and add it back when serving.

Substitutions
Find easy ingredient swaps to fit dietary needs or what you already have in your pantry.
Dairy-Free
- The sardine skillet itself is dairy-free. If serving it with Green Goddess dressing, choose a dairy-free version or another dairy-free vinaigrette.
Gluten-Free
- The core skillet ingredients are generally gluten-free, but check the harissa paste and salad dressing if you need to avoid gluten.
Vegetarian
- Replace the sardines with drained, cooked chickpeas or white beans. The beans will absorb the harissa sauce while providing a substantial alternative to the fish. Keep the boiled egg for an ovo-vegetarian version.
Convenience
- Fresh spinach: Substitute baby kale, allowing a little additional cooking time.
- Vine-ripened tomato: Use drained canned diced tomatoes when fresh tomatoes aren't available.
- Pressed garlic: Substitute a small amount of garlic powder when you're short on time.
- Smoked sardines: Use regular canned sardines in olive oil, though the finished dish won't have the same smoky flavor.
- Green Goddess dressing: Use a prepared vinaigrette or another dressing you enjoy.
- Fresh jalapeño: Add a pinch of crushed red pepper flakes for heat without chopping another pepper.

Variations
Explore fun twists and creative ways to make this recipe your own. Explore. Experiment. Taste.
- Add Lemon and Parsley: Finish the sardines with a squeeze of fresh lemon juice and chopped fresh parsley for a brighter flavor that contrasts with the smoky fish.
- Use Red Onion: Replace the regular onion with thinly sliced red onion for a slightly sharper flavor.
- Make It Milder: Omit the jalapeño and start with 1 tablespoon of harissa paste, adding more to taste.
- Serve It Over Rice: Spoon the warm sardines and vegetables over cooked rice instead of mixed greens.
- Make Sardine Toast: Serve the warm harissa sardines and vegetables over toasted sourdough or another sturdy bread.
- Add Chickpeas: Stir in drained canned chickpeas with the tomatoes to make the skillet meal more substantial.
5 Quick Cooking Tips
Cook's Notebook is your Cooking Tips Resource Guide. Become a better home cook with tips to help you cook more efficiently.
- Prep before heating the pan: Slice the vegetables, press the garlic, and quarter the boiled egg before cooking. Everything comes together quickly once the pan is hot.
- Start with medium heat: Sauté the onions, peppers, and tomatoes over medium heat to soften them without scorching the garlic or harissa.
- Taste the harissa first: Different brands vary in spice and salt levels. Start with less if you're unfamiliar with the paste and adjust to suit your taste buds.
- Warm the sardines gently: Canned smoked sardines are already cooked. Add them near the end and reduce the heat to low to prevent them from breaking apart.
- Handle the egg carefully: Add the quartered boiled egg last and gently coat it with the sauce instead of stirring vigorously.
Frequently Asked Questions
Here is a list of common questions I have answered. If you have any questions, please write them in the comments below.
Yes. Commercially canned smoked sardines are cooked during processing and can be eaten straight from the tin. In this recipe, you're gently warming them with the vegetables and harissa sauce.
Absolutely. Regular canned sardines in olive oil will work, although they won't provide the same smoky flavor. The harissa, garlic, and vegetables will still give the dish plenty of flavor.
It depends on your harissa paste and how much jalapeño you use. For a milder version, remove the jalapeño's inner ribs and seeds, use less harissa, or omit the fresh chile entirely.
Yes. Drained canned diced tomatoes make a convenient substitution. Since canned tomatoes may release additional liquid, adjust the added water as needed.
You can drain the sardines if you prefer because the recipe already uses olive oil to sauté the vegetables. If the oil from the tin has a pleasant smoky flavor, you can also use a little of it in the skillet, adjusting the additional olive oil accordingly.
