Instructions
Save Time in the Kitchen: Read the instructions thoroughly, then gather and prep all your ingredients before cooking! Learn Prepping Tips.
Heat the oil: Heat olive oil in a sauté pan over medium heat.
Sauté the peppers and onion: Add sliced medium onion, sliced red bell pepper, and sliced jalapeño. Sauté for approximately 1 minute.
Add the tomatoes and garlic: Stir in vine-ripened tomatoes and 3 pressed garlic cloves. Sauté for another 1 minute.
Wilt the spinach: Add fresh spinach, salt, and freshly ground black pepper to taste. Sauté until the spinach is partially wilted.
Add the harissa: Stir in the harissa paste, gently coating the vegetables and briefly warming it.
Warm the sardines: Arrange smoked sardines over the vegetables and add water. Reduce the heat to low, cover, and simmer gently for about 1 minute, or until the sardines are warmed through.
Add the egg: Arrange the peeled, quartered hard-boiled egg in the skillet. Gently turn the egg pieces to coat them with harissa sauce without breaking them apart.
Serve: Divide the warm harissa sardines, vegetables, and egg between serving bowls as desired. Serve alongside mixed greens dressed with Green Goddess dressing or another dressing of choice.
Notes
Harissa: Heat and saltiness vary by brand. Start with 1 tablespoon for a milder dish, then add more to taste.Sardines: Add them near the end because canned smoked sardines are already cooked and can break apart if stirred too much.Boiled Egg: Use a pre-cooked egg to keep the prep time to 20 minutes. Allow extra time if you need to boil and cool the egg.Serving: Serve the original dish alongside mixed greens with Green Goddess dressing.Storage and Reheating: Refrigerate leftovers in an airtight container for up to 3 to 4 days. Keep salad greens separate. Reheat the sardines and vegetables gently over low heat until thoroughly heated, and avoid stirring too much.
