Something that could season both my veggies and protein on the sheet pan, then transform into a creamy, smooth, gourmet-style sauce that's pleasing not only to the tummy but also to the eye.   • Storing the Roasted Meal: Allow the roasted vegetables and protein to cool completely. Transfer them to airtight containers and store in the refrigerator for up to 4 days. For optimal texture, store the roasted meat separately from the sauce.
  • Storing the Sauce:
    • Reserved citrus chili sauce (before mayonnaise):
      Store any unused reserved sauce in a sealed container in the refrigerator for up to 4 days.
    • Creamy finishing sauce (after adding mayonnaise):
      Once mayonnaise is whisked into the reserved sauce, store it in an airtight container in the refrigerator and use it within 3 days. Keep chilled until ready to serve.

Airtight Food Containers: I interchange glass food storage containers with plastic clip-on lids.   • Roasted vegetables and protein: Reheat in a 350°F oven until warmed through, or microwave gently until hot.
  • Creamy finishing sauce: Do not reheat. Serve chilled, or let it sit at room temperature for a few minutes before drizzling.
