Spicy Zhug Hummus with Feta - Twist on Classic Hummus

Quick and Easy Hummus Wrap Recipe

I took some of my leftover Zhug Feta Hummus and made some chicken wraps! In addition, this recipe uses my quick spicy zhug sauce, aka zhoug, a Middle Eastern-inspired green paste consisting of cilantro, parsley, jalapenos, chili pepper flakes, garlic, lemon, cumin, coriander, cardamom, and black pepper.

Ingredients and Instructions

You will first need to use about half a cup of my Spicy Zhug Feta Hummus to spread on a flatbread or wrap of your choice. There is just something about slapping some hummus on bread. Can somebody tell me why it's so good?!

Next, you'll need some air-fried chicken breast. Ensure it is also well seasoned since it competes with spicy hummus, fresh vegetables, and a lemony yogurt sauce. But don't worry, just follow the recipe below.

Finally, make the Greek yogurt sauce recipe with lemon, parsley, salt, and pepper. For that crisp, fresh taste, you will add some vine-ripened tomatoes, baby spinach, crisp cucumber, and thinly sliced shallots. Oh, so fancy!

Substitutions

  • Zhug Feta Hummus - You can replace this with store-bought hummus or zhug.
  • Yogurt Sauce - If you are short on time, you can substitute store-bought tzatziki.
  • Shallots - You can try thinly sliced red onion or white onion. If using a regular onion, I suggest soaking it first in cold water for 5 minutes.
  • Whole-Wheat Flatbreads - Try naan, tortilla wraps, or another flatbread.

Change Heat Level - Modify the hummus chicken wrap recipe's heat level to your liking and learn more about the Scoville Scale and Chili Pairings.

Variations

  • Vegetarian - Try the crispy turmeric herb tofu recipe, or even with falafels. Another way to skip the chicken is to add some shredded vegetables like cabbage, red bell pepper, and carrots tossed in balsamic vinegar, sugar, and olive oil.
  • Go Greek - Also try adding kalamata olives and pickled banana peppers to the original recipe to give it a Greek salad feel.

Equipment

  • Air Fryer - This hummus chicken wrap recipe was developed using the Ninja Foodi 5-in-1 Indoor Grill. However, you can roast the chicken in the oven if you do not have an air fryer. Furthermore, you have two options with different results: a sheet pan with parchment paper or a sheet pan with a sheet pan rack.
    • The parchment paper will produce chicken roasted in its juices with caramelization at the bottom.
    • In contrast, the sheet-pan rack will result in the chicken just roasting, as the hot air flows around the vegetables.
    • Now, the trick is not to overcrowd when using this method with whatever technique you choose, but if this happens, flip it in between cooking.

Storage

  • Refrigerator - To store in the fridge, you can place the salad, chicken, flatbread, hummus, and yogurt sauce in separate air-tight containers. The meal will last up to two days.
  • Freezer - I do not recommend freezing the fresh vegetables and yogurt sauce. However, follow the refrigeration process mentioned above. Then, you can place the chicken, hummus, and flatbread in a labeled, airtight container in the freezer.

Airtight Food Containers: I interchange glass food storage containers with plastic clip-on lids. I always suggest glass storage containers because they can be microwaved, hold food without staining, and keep food at a more stable temperature, keeping it fresher and longer.  I recommend checking out these airtight food containers on Amazon.

Cooking tips

  • Chopped Parsley Ready to Go - Keep a quarter cup of fresh chopped parsley stored in your refrigerator for quick use. Once you have finely chopped your parsley, place it in a small airtight container with a paper towel on the bottom to absorb any condensation.

How to Get Rid of the Strong Raw Onion and Shallot Taste?

Soaking thinly sliced shallots or onions in water for about 5 minutes can help remove the sharp, pungent taste that raw shallots and onions can impart. Another trick is to use fresh onions and shallots; older or already-cut ones usually have a distinct, strong, unwanted flavor.

Ingredients

For the Chicken

  • 1 pound boneless skinless chicken breasts cut into 4 equal portions
  • 1 tablespoon Shawarma spice blend or 1 tablespoon Creole seasoning
  • kosher salt and ground black pepper
  • 2 tablespoons avocado oil

Dressing

  • ½ cup Creamy Lemon Greek Yogurt Dressing | Easy 5-Minute

For the Wraps

  • 1 cup Spicy Zhug Feta Hummus
  • 4 whole-wheat flatbreads warmed
  • 2 cups fresh baby spinach
  • 2 medium vine-ripened tomatoes sliced into ½-inch sticks
  • ½ English cucumber sliced into ½-inch sticks
  • 1 small shallot thinly sliced

Instructions

  • Save Time in the Kitchen: Read the instructions thoroughly, then gather and prep all your ingredients before cooking! Learn Prepping Tips.
  • Preheat the Air Fryer: Preheat your air fryer to 375 °F for 3-5 minutes.
  • Season the Chicken: In a bowl, combine chicken breast pieces with Creole seasoning or Shawarma spice blend, salt, black pepper, and avocado oil until evenly coated.
  • Cook the Chicken: Place the chicken in a single layer in the air fryer basket. Air fry at 375 °F for 10-12 minutes, flipping halfway through. Chicken is fully cooked when it reaches an internal temperature of 165 °F. Let rest for 5 minutes, then slice into thin strips.
  • Warm the Flatbread: Heat in a dry skillet, microwave, or warm oven until soft and pliable.
  • Assemble the Wraps: Spread ¼ cup zhug-feta hummus onto each flatbread. Add sliced chicken. Top with spinach, tomatoes, cucumber, and shallots. Drizzle with ½ cup Creamy Lemon Greek Yogurt Dressing (divided across wraps). Roll into wraps and serve immediately.

Notes

  • For the best texture, assemble the wraps just before serving so the flatbread stays soft and the vegetables remain crisp.
  • Warm the flatbread before assembly to prevent tearing and help the wrap roll tightly.
  • If sensitive to raw onions, soak sliced shallots in cold water for 5 minutes to mellow the sharp bite.
  • Want more heat? Add a spoonful of extra zhug or a drizzle of your favorite chili oil.
  • To keep the wrap from getting soggy, spread the hummus first, then add chicken and vegetables on top.
