Turkey Meatball Wraps

Mediterranean & Middle Eastern Vibes!

A great way to eat my Lemon Pine Nuts Turkey Meatballs is as a wrap. The great thing about these meatballs is that they can last a while in the fridge if stored properly. You can use them in a variety of ways. In a rice bowl dish, as a wrap, or even as a pita sandwich.

My first try of zhug was from Trader Joe’s Zhoug Sauce, consisting of peppers, cilantro, and spices. I don’t add Trader Joe’s links anymore since they often change or discontinue a product to do their best to provide the best produce and groceries. That’s why I love them!

But you can watch Middle Eat’s video on preparing this fantastic sauce. I also used Trader Joe’s Feta, Drop Peppers, and Olive Antipasto mix. Again, I won’t provide a link for this since I’ve noticed it is not currently displayed on their website. But don’t worry. I will provide ingredients as an alternative to this antipasto.

Try it in a flatbread wrap or rice bowl with the Pickled Vegetable Pepper Slaw. If you are going the rice bowl route, try the Massaged Kale Pickled Vegetable Salad instead.

Instructions

Plated Whole Wheat Wrap with Vegetables

Layer ingredients close to the middle of the flatbread.

Plated Meatball Wrap

Place warm meatballs in the middle. The hot and cold combination is fantastic.

Meatball Sandwich Wrap

Top the meatball wrap with cold, refreshing tzatziki sauce.

Substitutions

  • Pepper Drop - Can't find them? Try DeLallo Sweet & Tangy Pepper Drops, or use pickled sweet peppers.
  • Whole Wheat Flatbread - You can use regular flatbread or whole wheat tortillas.
  • Store Bought Zhug -Due to its rise in popularity, you may be able to find zhug already prepared at your local market.
  • Fresh Pickled Red Cabbage - I highly suggest using freshly pickled red cabbage, not what you may find on the shelves in a glass jar; the texture is entirely different. If you cannot make or find this vegetable slaw, I suggest using freshly thinly shredded red cabbage or pickled red onions.

Equipment

If you plan to make the Mouthwatering Air Fryer Lemon Pepper Pine Nuts Turkey Meatballs.

  • Food Processor - Used to small chop the garlic, jalapeno, parsley, and onion quicker for the turkey meatball recipe. If you do not have a food processor, you can small chop by hand. If you are looking for a food processor, I suggest the KitchenAid 3.5 Cup Food Chopper. Also, it's super easy to use with a simple press down, and now the new model comes with a drizzle basin, great for making dressings and pesto.
  • Mixing Bowl - A medium mixing bowl will be large enough to combine all the ingredients.
  • Medium (2.6 tablespoons) stainless steel scoop - I brought the Fayomir Cookie Scoop Set, which comes with three, and you would use the medium-sized one, which is about two tablespoons.

Storage

  • Refrigerator - I suggest storing all components of the meatball wrap in separate airtight containers in the fridge. The meatballs and feta cheese mix will last up to 4 days.
  • Freezer - You can freeze the meatballs and flatbread. It should last about two months.

Air Tight Food Containers - I use Glass Food Storage Containers with a plastic clipping lid to store food.  For example, I always suggest glass storage containers since you can microwave them and hold food without staining the container, and the glass keeps them at a more stable temperature, which keeps the food fresher longer.

These are sweet, tiny Peruvian peppers in the shape of teardrops, hence the name. That is pickled, giving them also a tangy flavor, a great addition to salads and sandwiches.

Ingredients

  • 1 tablespoon olive oil
  • ¼ cup feta cheese crumbled or cubed
  • 12 kalamata olives
  • 12 pepper drops
  • 1 garlic clove minced or garlic pressed
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • ¼ teaspoon chili pepper flakes
  • ½ lemon juiced and zest
  • ¼ teaspoon kosher salt

  • Prep Flatbread: Warm the flatbread in a hot pan, toaster, or microwave (microwave for about 7 seconds).
  • Assemble: Layer the following ingredients portioned for each serving: zhug paste, sliced tomatoes, pickled cabbage, feta cheese mixture, meatballs, and top with tzatziki sauce.
