Spicy Air Fryer Salmon Meets Creamy Risotto

This air fryer salmon recipe combines two things I love: bold, spicy seasoning and creamy risotto. The salmon fillets and asparagus are coated with a homemade wet habanero adobo made with smoked paprika, oregano, garlic, cumin, lemon, and habanero sauce, then cooked together in the air fryer while the risotto finishes on the stove.

The yellow risotto gets its beautiful color from turmeric, while Arborio rice creates that naturally creamy texture risotto is known for. A splash of white wine, chicken broth, lemon, and grated Italian cheese round everything out.

And because the salmon cooks separately in the air fryer, you can focus on getting the risotto to the right texture instead of juggling another pan on the stove.

This recipe is a great example of how I like to cook at Just Maika Cooking: learn a traditional cooking technique, understand why it works, and then experiment with flavors from different cuisines.

Risotto gives us the technique. Slowly adding hot broth to Arborio rice while stirring helps release the starch that produces its signature creamy texture. Instead of keeping the accompanying salmon traditionally Italian, I went in a completely different direction with a spicy habanero adobo wet seasoning.

The turmeric isn't here to make this a traditional Italian risotto either. I use it to create that gorgeous yellow color while adding another earthy note that works beautifully with the adobo spices.

Think of this as a globally inspired dinner built around techniques you can reuse in many other meals.

Ingredients

Habanero Adobo Wet Seasoning

The wet adobo combines smoked paprika, dried oregano, garlic powder, onion powder, ground cumin, kosher salt, black pepper, habanero sauce, fresh lemon, and avocado oil. The combination gives you smoky, earthy, citrusy, and spicy flavors in one seasoning mixture. Reserve some of the dry spice mixture before adding the wet ingredients so it can also season the risotto.

Yellow Risotto

You'll need shallot, garlic cloves, avocado oil, Arborio rice, white wine, low-sodium chicken broth, turmeric, kosher salt, black pepper, and grated Italian cheese. Sauvignon Blanc works well as the white wine because its acidity complements the lemon and spicy salmon. If you don't cook with wine, use additional chicken or vegetable broth instead.

Salmon and Asparagus

You'll need salmon fillets, fresh asparagus, and optional fresh parsley for garnish. Choose salmon fillets of similar thickness so they finish cooking at about the same time.

Make the Habanero Adobo. Combine the smoked paprika, oregano, garlic powder, onion powder, cumin, kosher salt, and black pepper. Reserve a portion for seasoning the risotto.

Add the habanero sauce, avocado oil, lemon juice, and lemon zest to the remaining spices to create the wet adobo.

Chef Tip: Making your own seasoning blend gives you greater control over the salt and heat.

Prep the Vegetables. Trim the woody ends from the asparagus. Finely chop the shallot and garlic so they melt into the risotto rather than adding large pieces of texture.

Toast the Arborio Rice. Heat avocado oil in a Dutch oven over medium heat. Add the shallot and garlic and cook briefly without browning.

Add the Arborio rice and cook for a few minutes, stirring occasionally.

Chef Tip: Toasting the risotto rice before adding liquid helps develop flavor and gives you greater control over the final texture.

Deglaze With White Wine. Pour in the white wine and stir until most of the liquid has evaporated. Reduce to low heat before adding the broth.

Build the Creamy Risotto. Add some of the chicken broth along with turmeric, kosher salt, black pepper, and the reserved adobo seasoning.

Stir periodically as the rice absorbs the broth. Continue adding broth gradually rather than pouring it in all at once.

As you stir, the Arborio rice releases starch into the cooking liquid, producing that characteristic creamy risotto consistency.

Air Fry the Salmon and Asparagus. Preheat the air fryer to 375°F. Pat thawed salmon fillets dry with a paper towel. Arrange the salmon and asparagus in the air fryer basket, keeping everything in as close to a single layer as possible.

Brush generously with the habanero adobo wet seasoning.

Get a Silicone Brush.

Air fry for about 7 minutes, checking the salmon and asparagus for doneness. Depending on the thickness of the salmon fillets, they may need another 2 to 3 minutes.

Check the Salmon. Check the thickest part of the salmon with an instant-read thermometer. The fish should also begin to flake easily when tested. Remember that fillet thickness matters more than simply following a set cooking time.

Finish the Risotto. Continue adding broth until the Arborio rice is tender but still slightly firm, or al dente.

Test the risotto again to ensure most of the broth has been absorbed; however, if you don't want the liquid to dry up too much, the rice should slowly return to the center.

Remove the risotto from the heat and stir in the remaining lemon and grated Italian cheese. Taste and adjust the salt, black pepper, lemon, or cheese as needed.

Serve the risotto immediately, or it will become solid as it absorbs the liquid.

Serve Immediately. Spoon the creamy yellow risotto into shallow bowls and top with the habanero adobo salmon and air-fried asparagus. Risotto continues absorbing liquid as it sits, so serve it immediately for the best creamy texture.

Find easy ingredient swaps to fit dietary needs or what you already have in your pantry.

Dairy-Free

  • Italian Cheese Blend: Use your preferred dairy-free grated Italian-style cheese. Nutritional yeast can also add savory flavor, although it won't melt exactly like Parmesan or Pecorino.

Gluten-Free

  • This recipe is naturally gluten-free, but always check the labels on your broth, hot sauce, seasoning blends, and other packaged ingredients if you are cooking for someone who needs to avoid gluten.

Vegetarian

  • Salmon Fillets: Replace the salmon with thick slices of pressed tofu or tempeh coated with the wet adobo seasoning and air fry until browned.
  • Chicken Broth: Substitute a light vegetable broth or vegetable stock. Avoid an intensely roasted vegetable stock that could overpower the delicate risotto.

Convenience

  • Homemade Adobo Seasoning: Short on time? Use a store-bought adobo seasoning, then add the habanero sauce, avocado oil, and lemon to create the wet mixture.
  • Shallot: Substitute finely chopped onion.
  • Chicken Broth: Use chicken stock or prepared chicken bouillon. Choose a lower-sodium option when possible so you can control the final seasoning.
  • White Wine: Replace it with additional broth if you prefer to cook without alcohol.
  • Fresh Salmon: You can cook frozen salmon directly in the air fryer when you're short on time. Partially air-fry it first, then apply the wet seasoning and continue cooking until done.
  • Habanero Sauce: Scotch bonnet pepper sauce is a great alternative. For less heat, use a milder chile sauce.

Explore fun twists and creative ways to make this recipe your own.

  • Rotisserie Chicken - For an easy meal, instead of salmon, try the wet adobo seasoning on store-bought chicken, using the same air-frying time. Or use boneless, skinless chicken breast. Salmon cooks faster than chicken breast. You will need to cook the chicken first. It can take 15 to 18 minutes. Add the asparagus when it has 7 to 8 minutes of cooking time left.
  • Different Side Dish - If you don't want to eat this with risotto, you can make a different type of rice, such as white rice or aromatic steamed jasmine rice.  This will also work with brown basmati rice or leftover rice with turmeric, adobo's warm spices, and lemon zest.

Equipment

For this particular meal, that last benefit is important. Risotto needs attention as the rice absorbs the broth, so letting the COSORI handle the salmon and asparagus makes the entire cooking process much easier to manage. And don't forget the frozen-salmon shortcut. COSORI offers recipes that cook frozen salmon without thawing first, making the air fryer even more useful when dinner isn't planned ahead.

Storage and Reheating

Refrigerator

Let leftovers cool promptly, then store the salmon and risotto separately in airtight containers. Refrigerate the cooked salmon for up to 3 to 4 days and the risotto for up to 3 to 4 days.

Freezer

Freeze the cooked salmon in an airtight, freezer-safe container. You can also freeze the risotto, although it will be softer after thawing because the rice continues absorbing moisture.

Reheating Risotto

Place the risotto in a saucepan over low heat and add a splash of chicken broth or water. Stir gently as it reheats until the rice loosens and becomes creamy again.

Reheating Salmon

Reheat the salmon gently so it doesn't dry out. You can return it to the air fryer briefly at a lower temperature or microwave it in short intervals until warmed through.

Airtight Food Containers: I interchange glass food storage containers with plastic clip-on lids.     • ½ teaspoon dried oregano
    • ½ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • ¼ teaspoon ground cumin
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground black pepper
    • 1 teaspoon habanero sauce
    • 1 medium lemon zested and juiced
    • 1 tablespoon avocado oil

    Yellow Risotto

    • 1 shallot finely chopped
    • 2 garlic cloves finely chopped
    • 1 tablespoon avocado oil
    • ¾ cup Arborio rice
    • ¼ cup dry white wine preferably Sauvignon Blanc
    • 2 cups low-sodium chicken broth preferably warm
    • ½ teaspoon ground turmeric
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground black pepper
    • ¼ cup grated Italian cheese blend Parmesan, or Pecorino

    Salmon and Asparagus

    • 8 ounces of salmon fillets two 4-ounce portions
    • ½ bunch of asparagus about 12 ounces, trimmed
    • Fresh parsley for garnish optional

    • Prep Before Cooking: Read through the recipe, gather the ingredients, and complete the chopping, measuring, zesting, and juicing before you begin. Risotto comes together more easily when everything is ready to use.
    • Make the Habanero Adobo: Combine the smoked paprika, oregano, garlic powder, onion powder, cumin, kosher salt, and black pepper. Reserve 1 teaspoon of the dry seasoning mixture for the risotto. Add the habanero sauce, avocado oil, half of the lemon juice, and half of the lemon zest to the remaining seasoning. Stir into a wet adobo and set aside with a silicone brush.
    • Prep the Asparagus: Trim about 1½ inches from the woody ends of the asparagus, or trim where the stalks naturally become tender. Set aside.
    • Start the Risotto: Heat the avocado oil in a Dutch oven over medium heat. Add the shallot and garlic and cook for about 1 minute, stirring frequently, until they begin to soften without browning.
    • Toast the Arborio Rice: Add the Arborio rice and cook for about 3 minutes, stirring frequently to coat the grains in the oil and aromatics without browning them.
    • Deglaze: Add the white wine and stir until it is almost completely absorbed. Reduce the heat to medium-low.
    • Add the Broth: Stir in about half of the warm chicken broth along with the turmeric, salt, black pepper, and reserved adobo seasoning. Cook, stirring regularly, until most of the liquid is absorbed.
    • Continue the Risotto: Add half of the remaining broth and continue cooking and stirring until it is mostly absorbed. Add the remaining broth as needed and continue cooking until the Arborio rice is creamy and tender but still slightly firm, or al dente.
    • Preheat the Air Fryer: While the risotto cooks, preheat the air fryer to 375 °F.
    • Season the Salmon and Asparagus: Pat the salmon fillets dry with a paper towel. Arrange the salmon and asparagus in the air fryer basket in a single layer, leaving enough room for hot air to circulate. Brush the salmon and asparagus evenly with the habanero adobo.
    • Air Fry: Cook at 375 °F for about 7 minutes. Check the salmon and asparagus. Depending on the thickness of the salmon fillets, continue cooking for another 2 to 3 minutes, if needed.
    • Check for Doneness: Cook the salmon until the thickest part reaches 145 °F. The flesh should be opaque and flake easily with a fork.
    • Finish the Risotto: When the rice is al dente and surrounded by a creamy sauce, remove it from the heat. Stir in the remaining lemon juice, remaining lemon zest, and grated Italian cheese. Taste and adjust the salt, black pepper, cheese, or lemon as needed.
    • Serve: Divide the creamy yellow risotto between two bowls or plates and top with the air-fried habanero adobo salmon and asparagus. Garnish with fresh parsley, if desired, and serve immediately.

    Save Time With Frozen Salmon: You don't always have to thaw salmon before air frying it. COSORI recommends cooking frozen salmon directly in the air fryer and extending the cooking time as needed. Because this recipe uses a wet adobo, start cooking the frozen salmon without the adobo, then brush on the seasoning once the exterior has thawed before returning it to the air fryer to finish cooking. Always use the internal temperature rather than time alone to determine doneness.
    For Convenience: Store-bought adobo seasoning can replace the homemade dry spice mixture when you're short on time. Check the sodium level before adding additional salt.
    Cheese Options: Grated Italian cheese blends commonly contain Parmesan, Pecorino, or a combination of Italian hard cheeses. You can also use Parmesan or Pecorino individually.
    No Wine: Replace the white wine with an equal amount of chicken broth if you prefer not to use wine.
    Adjust the Heat: Reduce the habanero sauce for a milder version or substitute Scotch bonnet sauce for a different fruity chile flavor.
    Risotto Consistency: Risotto should be creamy and loose enough to spread slightly when spooned onto the plate. If it becomes too thick before serving, stir in a small splash of warm chicken broth.
    Traditional Adobo Note: This is my own habanero adobo-inspired seasoning blend for this recipe, not a traditional regional adobo preparation.

    What Makes the COSORI Air Fryer Great for Salmon?

    I developed this recipe using a COSORI air fryer, and it is one of my favorite tools for cooking salmon because the circulating hot air cooks the fish quickly while helping the exterior develop color without requiring much added oil.

    It is especially useful in this recipe because the salmon and asparagus can cook while you finish the risotto on the stove. Instead of managing another skillet, you can focus on stirring the Arborio rice and monitoring how quickly it absorbs the hot broth.

    COSORI's own salmon recipes use similar techniques, including preheating the air fryer, arranging salmon in the air fryer basket, and cooking until the thickest part reaches the proper internal temperature. Cooking time varies depending on the thickness of your salmon fillets, so a food thermometer is much more reliable than judging by time alone.

    Chef Tip: Don't overcrowd the air fryer basket. Arrange the salmon fillets and asparagus in a single layer whenever possible so the hot air can circulate around the food.

    Can You Air Fry Salmon Straight From Frozen?

    Yes! This is one of my favorite time-saving options for nights when you forgot to thaw the salmon. COSORI specifically provides recipes for cooking frozen salmon directly in the air fryer without thawing it first. Their method partially cooks the frozen salmon before adding the sauce or glaze, then returns it to the air fryer to finish cooking.

    That method works particularly well for this recipe because the habanero adobo is a wet seasoning.

    How to Adapt This Recipe for Frozen Salmon

    1. Start with individually frozen salmon fillets rather than fillets frozen together in a solid block.
    2. Place the frozen salmon skin-side down in the preheated air fryer basket and cook without the wet habanero adobo. This gives the surface time to thaw and prevents the seasoning from sliding off the frozen fish.
    3. Once the exterior has thawed and the salmon has begun cooking, carefully open the basket and brush the top generously with the habanero adobo mixture. Return it to the air fryer and continue cooking until the salmon is done.

    COSORI's frozen salmon recipes generally take longer than fresh salmon, and cooking time varies with fillet thickness. Their guidance recommends using a food thermometer and checking the thickest part of the fish rather than relying solely on the timer.

    Important: Keep the adobo used for brushing raw or partially cooked salmon separate from any sauce you intend to serve at the table.
