Set the Air Fryer: Preheat the air fryer to 400 °F for 20 minutes.
Cook the Chicken Wings: Pat the chicken wings dry with paper towels, then season with lime juice, adobo seasoning, and avocado oil. Then air-fry for 10 minutes on each side, until the internal temperature reaches 165 °F.
Make the Dressing: Blend the cilantro with garlic, jalapeno, honey, half of a lime juiced, mayonnaise, salt, pepper, and avocado oil in a food processor. Then, add and blend with the Greek yogurt and refrigerate.
Make the Garnish: On a cutting board, bunch up the remaining cilantro, thinly slice, and set them aside. Then, slice the tomatoes and set them aside.
Plate Up: When the chicken is done, spoon the dressing onto the center of the plate in a wide circular motion. Then, bunch up the greens in the center half of the dressing and add the sliced tomatoes. Stack the chicken wings next to the salad. Note: A photo tutorial on how to stack the chicken wings can be found on the recipe's blog page. Finally, garnish with the chopped cilantro.
