Set the Air Fryer: Preheat the air fryer to 400 degrees Fahrenheit, with the cooking time at 20 minutes.
Cook the Chicken Wings: Pat dry the chicken with paper towels and season with lime juice, adobo seasoning, and avocado oil. Then, air fry for 10 minutes on each side, cooked to an internal temperature of 165 degrees Fahrenheit.
Make the Dressing: Blend the cilantro with garlic, jalapeno, honey, half of a lime juiced, mayonnaise, salt, pepper, and avocado oil in a food processor. Then, add and blend with the Greek yogurt and refrigerate.
Make the Garnish: On a cutting board, bunch up the remaining cilantro, thinly slice, and set them aside. Then, slice the tomatoes and set them aside.
Plate Up: When the chicken is done, spoon the dressing onto the center of the plate in a wide circular motion. Then, bunch up the greens in the half center of the dressing and add the sliced tomatoes.
Stack the chicken wings next to the salad. Note: A photo tutorial on how to stack the chicken wings can be found on the recipe's blog page. Finally, garnish with the chopped cilantro.
